These homemade Beef Breakfast Sausages are a savory and satisfying way to start your day. Packed with bold flavors from sage, thyme, and garlic, they deliver that classic sausage taste with a wholesome twist. Perfectly seasoned and easy to make, they’re ideal for meal prep or weekend brunch. Serve alongside eggs, toast, or pancakes for a hearty, comforting breakfast everyone will love.

Ingredients

Scale

1 lb Ground Beef (80/20)

1 tsp Salt

1/2 tsp Coarse Ground Black Pepper

1 tsp Dried Sage

1/2 tsp Dried Thyme

1/2 tsp Garlic Powder

1 tbsp Optional Sweetener (e.g., maple syrup or brown sugar)

1/4 tsp Optional Chili Flakes

Instructions

  • In a large bowl, add the ground beef.

  • Sprinkle in the seasonings: salt, black pepper, sage, thyme, and garlic powder.

  • If using, add the optional sweetener (maple syrup or brown sugar) and chili flakes for a touch of heat.

  • Mix well using your hands or a spoon until all ingredients are fully combined. Be careful not to overmix.

  • Divide the mixture into equal portions and shape into small patties (about 2 to 3 inches wide).

  • Heat a skillet over medium heat and lightly grease it with oil or cooking spray.

  • Cook the patties for 3–4 minutes on each side, or until browned and fully cooked through (internal temperature should reach 160°F / 71°C).

  • Remove from the pan and place on a paper towel–lined plate to drain excess grease.

  • Serve hot, with eggs, toast, or as part of your favorite breakfast spread.

Notes

Meat Options: While this recipe uses ground beef, you can substitute with ground turkey or chicken for a leaner version, though it may be less juicy.

Make-Ahead Friendly: You can prepare the sausage mixture a day in advance and store it covered in the fridge. Just shape and cook when ready to eat!
